Non-Dairy Low Fat Pumpkin Pie

I pulled this recipe out of a magazine and thought it was pretty good. It's an excellent recipe for those with dietary restrictions.

Non-Dairy Low Fat Pumpkin Pie

1-1/2 packages Silken Lite Firm Tofu
2 cups canned or cooked pumpkin
2/3 cup honey (I used Agave Nectar)
1 tsp vanilla
1 Tbsp. pumpkin pie spice OR
1-1/2 tsp. ground cinnamon
3/4 tsp. ground ginger
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves

1 unbaked 9" pastry crust (I usually make a vegan one)

Drain tofu and blend in a food processor or blender until smooth. Add remaining ingredients; blend well. Pour into unbaked pie crust. Bake in preheated 350 degree oven for about 1 hour. Filling will be soft, but will firm as it chills. Chill and serve.

Makes 8 servings.

Pentecost Greetings


Well, actually the feast of Pentecost was yesterday. The photo comes from our chapel/library on the day of Pentecost. For you laity, Pentecost is the celebration of the birthday of the church. The story goes that the early followers could all speak and understand one another after 'tongues of fire' descended upon them in the account of Pentecost in the book of Acts.

Enough of that, though.

It's been a long time, since Tim or I have posted. He's been busy finishing up the semester at Naropa and I just finished my semester at CU Denver. I wrote about 50 pages of papers for my three classes and I have taken on a new Masters program in addition to English. I will be taking over as librarian at work, so I need credentials. I will leave CU with two Masters degrees.

In addition, Tim and I are helping our friend, The Rev. Ruth Woodliff-Stanley, at St. Thomas church in Denver. I am hoping they will sponsor me for theological studies in a few years (when I finish my other Masters degrees).

Well, that's enough for now.

Pics: Saint John's Episcopal Cathedral

Well, it's Sunday and Sunday always means Mass for us at Saint John's Episcopal Cathedral. I figured that it was about time to share some photos of one of my favorite places in Denver. Below are pictures of the outside and inside of the cathedral. The banner says "Welcoming and Inclusive of All." It is the welcoming and inclusive spirit of the Episcopal Church that attracted me in the first place. Other pictures are of the church's altar and the Kimball pipe organ console.

When I found out that my car was totaled, I decided to purchase a Subaru Forester. They have the highest government crash test rating and are all-wheel drive. Snow will no longer be a problem for us! Please ignore the dirt. There was a snowstorm on the way home from the Subaru dealership.

Some Bud Pictures for the Family (A Post by Tim)

Josh sometimes wonders how it is that when Mom and Dad call/email, they immediately ask how Bud is ... and oh by the way, how is Josh doing? My friend Lindsay's mom asks about Bud, and I don't even know the woman. Anyway, here are some pics of Bud, and yes Mom, he's doing just fine ...

The one end is a corkscrew that goes in the ground. The spiral thing stretches out to 12 feet. He seems not to mind being tied up too horribly, although he must miss Oxford with its lack of leash-laws.



  • (Above) Bud with Neville and Constance. This a rare moment for Constance, who isn't crazy about the dog.
There are a number of Ridgeback rescue organizations out there. The most well-funded seem to be Ridgeback Rescue of the United States and Rhodesian Ridgeback Rescue, Inc. The available dogs from RRUS are older, but they do have puppies available sometimes. Ridgebacks have a lot of hound in them, and many end up on the streets because of this. If you've ever owned a Beagle, you know how it is. Still, Ridgebacks are awesome dogs, and they get along well with everything from cats to kids, as Josh's priest friend Ruth will attest. She brought her kids over one afternoon to bake, and Bud ended up having his way with young John. At least he doesn't bite!
